Tasting notes, #5



The fifth try is pretty tastey. It has a slightly rubbery texture, but not in a bad way. The flavors are indeed developing, without a ton of lactic acid, but actually quite a nice balance between acid and body. Again, this is not an embarrassing loaf, but it isn't incredible.
