Previously I was using vegetable rennet in tablet form, but yesterday I purchased liquid vegetable rennet and it has indeed made a bit of a difference. At least with the goat milk I'm using, the curds were squeakier and firmer. It's likely that the tablet rennet was just loosing potency, even though it was stored in the freezer. Not to say it did a bad job, just not as good as the new rennet.
