More pics of 'Simple Hard Cheese'

Using the recipe and instructions for Simple Hard Cheese won't win any beauty contests, but it does have a rustic aesthetic that at least I appreciate. Because of the knot in the cheese cloth there is almost always a large divot on one side, but it looks kinda cool if you get the press tight enough.

This particular loaf has dried for four days, and is just right to wrap up. Some of the edges are a little too dry, which is just about perfect. The big enemy after it gets wrapped is mold. While it is pretty easy to remove mold from the surface with a cloth and white vinegar, you want to prevent as much as possible by getting a good dry surface.
