Blue Update and 3 Gallon Raw

Quick visual update on some of the shenanigans going on here. The blue cheese experiment not only looks more like a moon rock than cheese, but it has become, shall we say, fragrant. A similar smell to that of a durian fruit I attempted to try last week. I am actually a little afraid to try this cheese, my instincts just keep screaming, "RUNAWAY!!!!!!!!".

The other pics are of a thermophillic three gallon loaf. It has washed curds and about two pints of the cream were removed. I want to have a better balance between the proteins and the fat than in previous loaves.
